LOCAL restaurant entrepreneur Francis Carroll is the man responsible for bringing long-term friend Marco Pierre White to the North West.
This isn't the first time that the two chefs have worked together after they both trained under the famous Roux brothers at La Gavroche in London.
Francis has pulled-off a real coup for the region's food lovers with The Marco Pierre White Steakhouse and Grill opening at Doubletree by Hilton Chester in February, and Marco Pierre White at The Swann Inn Aughton which will open in January 2010.
"I've been talking to Marco for years about getting him up here. Marco's restaurants are all about the quality of the experience and are perfect for the relaxed ease of Cheshire and Lancashire diners.

As well as the driving force behind the move, Francis has been the negotiator between Marco and the excited owners of the venues, Sanguine Hospitality Ltd, a luxury leisure group.
Since the beginning of their careers Marco and Francis have taken an interest in each others' ventures with Francis helping out at Marco's first London restaurant Harvey's with other chefs that included a trainee Gordon Ramsey.
After his success with Harvey's, Marco opened the Canteen with Michael Caine. He then went to Hyde Park in Knightsbridge where he was the first Chef to call a restaurant after his own name.
When Francis opened Brasserie St Pierre in Manchester Marco visited on three occasions in the early 1990s hosting a lunch and dinner, and again at Cabbage Hall in 2007 in association with his book "White Slave". Marco was impressed by his friend's establishment, which Francis has now sold to concentrate on the new endeavours.
"We originally met when I was at the Gavroche and Marco had Harvey's and we have been friends ever since. We still share the same passion that we did back then.
"We have always kept in touch since the early days, chatting on the phone, visiting each other and helping each other out with projects wherever possible.
"I'm really excited about these latest ventures in the North West, I will be running all three for him on a daily basis and it's great to be working together yet again."

Marco Pierre White takes pride in all of his establishments and although these three are out of London it will not compromise his commitment or involvement with his restaurants.
