Themed menu the order of the day at city's newest eaterie

Liverpool's newest hotel, set to open in the city centre on Monday (June 6), will feature an exclusive non-residents lounge providing a regionally-inspired menu.

Hotel Indigo Liverpool, on Chapel Street, which will also include a Marco Pierre White restaurant, will be named the Cotton Lounge to reflect the venue’s theme of the city's cotton trading history.

The £15m development, owned and operated by Sanguine Hospitality Limited, is teaming up with local producers to supply an exciting food and drinks menu for the 24-seater lounge.

The Cotton Lounge's signature cocktail will be the Cotton Candy Martini - a tasty combination of candy floss, Smirnoff Black Vodka, Grenadine and Chambord liqueur. It has also partnered up with Liverpool Organic Brewery to provide two speciality beers – 24 Carat Gold and Liverpool Pale Ale.

Liverpool bakery Camp Cupcake will provide a selection of cakes and the menu will also feature locally sourced produce such as Trough of Bowland beef, Richard Woodall Cumbrian ham and a selection of Lancashire cheeses.

Gary Scott, restaurant manager, said:

The Cotton Lounge will be a comfortable place where residents can relax and enjoy a bite to eat and something to drink in informal surroundings.

It is also in the ideal location for non-residents to pop in and grab a sophisticated, simple lunch or a light dinner such as a sharing platter which is beautifully presented on olive wood.

We will be serving international classics and locally inspired dishes throughout the day and night.

The menu will also be available in a 24-seater outdoor area for those who want to take advantage of al fresco dining.

The Cotton Lounge will be for those people who may want to enjoy a tasty variety of food in an intimate, relaxed atmosphere. This means we can provide an extensive food and drink offering to all customers, including themed cocktails created by our mixologists and locally sourced produce.

Customers can enjoy a sociable drink or bite to eat in our outdoor dining area on warmer days and evenings.

The hotel draws on the region's cotton trading history and features include cotton-themed decoration in its 151 bedrooms and artwork depicting its location in the heart of the commercial district including St Nicholas church, Edmund Street, the Cotton Exchange and the Liver Birds.
